Turmeric Socca with Avocado and Mango Salsa

Socca is one of my FAVORITE quick meals! Why? It's simple, filling, and EXTREMELY hard to mess up. I love the mango and avocado salsa addition in this dish, I think it compliments the socca perfectly. For a light meal, I'd say this dish serves two. For an appetizer, it could definitely serve more! 

INGREDIENTS
Socca:
• 1 cup chickpea flour
• 1 cup water
• ½ teaspoon smoked paprika
• ½ teaspoon cumin
• ½ teaspoon garlic powder
• ¼ teaspoon turmeric
• 2 pinches sea salt
• 1 tablespoon avocado oil

Avocado & mango salsa:
• 1 large ripe mango, chopped
• 1 teaspoon coconut oil
• 1 teaspoon smoked paprika
• 1 red bell pepper, diced
• 1 avocado, chopped
• 1 tablespoon lemon juice
• fresh cilantro to taste
• salt to to taste


DIRECTIONS
1. Preheat oven to 450 degrees F, and add 1 tablespoon avocado oil to a cast-iron skillet. Set aside. 

2. In a medium bowl, add 1 cup chickpea flour with 1 cup water and whisk until no flour clumps remain. Next add in turmeric, paprika, cumin, garlic powder, and sea salt. Whisk again and let sit for 15 mins - a few hours in the fridge to thicken. 

3. Pour batter onto skillet, and place in the oven for 10-12 minutes. Take out of the oven to carefully flip, then put back in for another 5 minutes. Now, remove socca from oven and let cool while you make the topping! 

4. In the same cast iron skillet, add 1 tsp coconut oil and the chopped mango. Heat on the stovetop at medium, add smoked paprika, and mix until mango starts to soften & caramelize on edges. 

5. After 5 or so minutes, take mango off of stovetop, and add to a small mixing bowl. Make sure to pour in the remaining juices too! Next, add in bell pepper, cilantro, avocado, and salt to your liking. Stir so that ingredients are dispersed, then add on top of the socca! 

6. Slice, serve, and enjoy!
