Socca with Hempseed Pesto

Hi loves! If you’ve been keeping up with my most recent stories on Instagram, chances are you’ve seen this pesto quite a bit. Instead of continuing to tease y’all about how good it is, I’m finally sharing the recipe today so you can whip it up! One of my favorite ways to make it is with a big socca, or chickpea flatbread, like this. Ingredients are easy, directions are simple, and end product is so darn pretty you may not even want to eat it! Trust me - it’s still delicious and you will devour quickly. This recipe serves about 4. Hope you enjoy! :)

INGREDENTS
Pesto

• 3-4 cups fresh basil
• 1 cup baby kale or arugula
• juice of 1 lemon
• ¼ cup pumpkin seeds
• ¼ cup sunflower seeds
• ¼ cup hempseeds
• 3 tablespoons hemp powder (add if you want extra protein! skip if ya don’t)
• 3 tablespoons fresh cilantro
• 6 tablespoons extra virgin olive oil (i love using this garlic infused oil)
• ¼ cup water (add more as necessary to thin)
• sea salt, to taste
• black pepper, to taste

Socca
• 2 cups chickpea flour
• 2 cups water
• ½ teaspoon coriander
• ¼ teaspoon cumin
• ½ teaspoon turmeric
• 2 pinches sea salt
• few twists of black pepper
• 1 tablespoon avocado oil

Toppings (Optional)
• 1 cucumber, thinly sliced
• 1 small watermelon radish, finely chopped
• 1 avocado, sliced
• chopped cilantro for garnish
• extra olive oil for drizzle


DIRECTIONS
1. First, add all pesto ingredients to a Nutribullet/food processor and blend until completely smooth. To thin, add extra olive oil or water until your desired consistency is reached.

2. Preheat oven to 450 degrees F, and add 1 tablespoon avocado oil to a cast-iron skillet. Set aside. 

3. In a medium bowl, add chickpea flour and spices with water and whisk until no flour clumps remain. Let sit for 30 mins to a few hours in the fridge to thicken

4. Pour batter onto skillet, and place in the oven for 10-12 minutes. Take out of the oven to carefully flip, then put back in for another 5 minutes. Now, remove socca from oven and let cool.

5. Add pesto, sprinkle any additional toppings, slice, and devour!! :)
