Red Velvet Chia Pudding

February, the month of luvv, is finally upon us ppl. Therefore I think it’s only appropriate to create more valentines-themed recipes! In all honesty though, this recipe was developed as a result of my red velvet phase many years ago. Now I (and you!) can enjoy a healthier alternative with - you guessed it - beets! Gotta get those veggies in, durrr. For those of you who’ve never tried this combo, beets and chocolate go together ridiculously well. I'll be eagerly awaiting your feedback! <3

INGREDIENTS
Chia pudding
• ½ cup chia seeds
• 2 cups almond milk, unsweetened
• 1-2 teaspoons coconut sugar (or omit)

Red velvet smoothie layer
• 2 frozen bananas, sliced into coins
• 1 small beet, peeled and steamed (about ⅓ cup)
• ⅓ cup frozen raspberries
• 1 large medjool date
• 3 tablespoons cacao powder (optional to add chocolate protein powder instead)
• 2 tablespoons cashew butter
• ½ cup coconut yogurt, unsweetened
• 2 cups almond milk, unsweetened

Topping ideas: 
• MORE NUT BUTTER!
• coconut yogurt
• raspberries, strawberries
• chocolate chips/cacao nibs
• coconut flakes
• ground cinnamon & nutmeg

DIRECTIONS
1. For the chia pudding, add chia seeds, almond milk, and coconut sugar in a glass jar. Mix well and leave overnight (or a few hours) in the fridge to thicken. 

2.  For the 'red velvet' layer, simply add ingredients to a high-speed blender and blend on high until you get a thick, velvetyyy consistency. 

3.  Grab two individual drinking glasses, and fill each with a layer of chia pudding first. Next add red velvet smoothie layer, and top with as many delicious goodies as your heart desires. Share with your fabulous significant other/galentine/bff, or treat yo'self and enjoy the other one later!
