Lemonade has always been one of my favorite summertime drinks. However, I find that a lot of restaurants make their batches a little too sweet...so I usually make my own! I've been reading a lot about the benefits of celery juice for an anti-inflammatory diet, so I decided to mix up the traditional lemonade and make it even healthier ;) Makes about 3-4 cups.
• 5-7 celery stalks, diced
• 1 ⅔ cups water
• juice of 1 lime
• juice of 2 lemons
• 1-2 tablespoons coconut sugar
• 3-4 large ice cubes
1. In a nutribullet/high speed blender add diced celery, water, citrus juices, and blend until celery is fully broken down to liquid form. When you blend the celery, it will have a little 'froth' - that's ok! You could strain it out, but I left it as is.
** If you have a juicer, this could work as well. You probably want to juice a few more stalks of celery though to get enough juice. Then add in the citrus and water in a pitcher, and mix.
2. Stir in sugar to desired sweetness. I used 1 tablespoon and it was the perfect amount of sweetness for my boyfriend and I. If you're a real celery lover, you could even nix the sugar! I've done it before and it's still refreshing!
3. Add in some ice cubes & you're golden! I'd recommend drinking asap for optimal benefits, as fresh is always better for nutrients.
